Indian summer at Costa Blanca

What a great summer we have had. Not only in terms of the amount of sunshine and high temperatures (August was very hot), but also in terms of events and private dinners. With the air conditioners on high, more than 20 villas between Javea and Altea cooked for holidaymakers or homeowners. With Roeland in the kitchen, they enjoyed the Spanish sunset and our exquisita gastronomía carefree. And we are not done yet. September and October are full of activities, with two weddings and private dinners in beautiful locations, such as at our neighbours Montesanco Bodega. Indian summer aan Costa Blanca

Wat een geweldige zomer hebben we achter de rug. Niet alleen qua hoeveelheid zonuren en hoge temperaturen (augustus was erg hot), maar ook qua evenementen en private diners. Met de airco’s op hoog werd er in meer dan 20 villa’s tussen Javea en Altea gekookt voor de vakantievierders of huiseigenaren. Met Roeland in de keuken konden ze onbezorgd genieten van de Spaanse zonsondergang en onze exquisita gastronomía. En we zijn nog niet klaar. September en oktober staan bol van activiteiten, met twee bruiloften en private diners op prachtige locaties, zoals bij onze buren Montesanco Bodega. Vanuit een splinternieuwe keuken in de oude RiuRau kunnen wij de gasten gaan verwennen. Tot ziens bij u (t)huis of op een andere locatie in Marina Alta/Costa Blanca.

Het geheim van de chef

Wat is het geheim van de chef?

Roeland geeft het niet snel prijs. Net zoals heel veel chefs die zijn leermeesters waren, is de bereiding van een gerecht een geheim. Het geheim van de chef was in een professionele restaurantkeuken een eed die aflegde vanaf het eerste moment dat je de keuken betrad. Die eed verbrak je niet. Je collega’s waren de enigen die wisten hoe een nieuw gerecht tot stand kwam. Het is misschien ouderwets, maar Roeland houdt zich er nog steeds aan. Kan ook vaak niet direct benoemen hoeveel gram van dit of van dat toegevoegd moet worden om juist die ene smaak, die finishing touch, van een gerecht te creëren. Het is als een kunstschilder die zijn kwast oppakt en begint te schilderen met wat in zijn hoofd (of hart) zit. Met de basisprincipes op zak creëert ook hij juist iets moois van binnenuit. Ook bij Roeland. Daar zit zijn werkelijke kracht.

Roeland heeft de kneepjes van het vak geleerd in gerenommeerde keukens in de provincie waar hij geboren is, Nederlands Limburg. Hij begon als leerling in de keuken van Chateau Neercanne in Kanne (B) nabij Maastricht en Chateau St. Gerlach in Valkenburg aan de Geul. Snel werkte hij zich op als kok vanuit de ‘koude keuken’ naar de warme keuken’, steeds een stapjes dichter bij het fornuis waar de chef het voor het zeggen had. Daar moest hij wel goed opletten. Geen pardon, duidelijke taal, was iets niet goed, dan opnieuw. Keer op keer. Discipline en volharding was wel nodig in die tijd, in keukens waar iedere kok onder enorme stress werkte om op een hoog culinair niveau te blijven en (terugkerende) gasten in het restaurant niet teleur te stellen. Er ging geen enkel bord door als de chef het niet goedgekeurd had. Na de ‘dienst’ was je nog niet klaar, want het fornuis en de keuken moesten voor de volgende dag blinkend schoon zijn. Net als alle andere leerlingen werd ook Roeland aan die klus gezet toen hij begon, maar eenmaal zijn plekje naast de chef verworven, leerde hij de werkelijke finesses van haute cuisine. De chef van St. Gerlach was zijn grootste leermeester, die Roeland meenam in de wereld van finesse, pure kruiden en authenticiteit in de keuken. Noem nu een kruid en Roeland maakt er een sublieme saus van en alle ingrediënten zijn puur en van hoge kwaliteit, net zoals toen. Die aandacht blijft, want alleen met het beste van het beste komt zijn creatie op het bord. Wederom inspiratie van binnenuit.

Een (oude) rot in het vak met de professionaliteit nog in zijn vezels, draait hij nu (over)uren in zijn eigen keuken om gasten aan de Costa Blanca te verwennen met zijn, zoals we het hier noemen, fine dining. Exquisita Gastronomía.

The chef's secret

What is the chef's secret?

Roeland doesn't give it away easily. Like a lot of chefs who were his masters, the preparation of a dish is a secret. In a professional restaurant kitchen, the chef's secret was an oath taken from the first moment you entered the kitchen. You didn't break that oath. Your colleagues were the only ones who knew how a new dish was created. It may be old-fashioned, but Roeland still adheres to it. Can also often not directly name how many grams of this or that should be added to create just that one flavour, that finishing touch, of a dish. It's like a painter picking up his brush and starting to paint with what's in his head (or heart). With the basics in his pocket, he too creates precisely something beautiful from within. Also with Roeland. That is where his real strength lies.

Roeland learned the tricks of the trade in renowned kitchens in the province where he was born, Dutch Limburg. He started as an apprentice in the kitchens of Chateau Neercanne in Kanne (B) near Maastricht and Chateau St. Gerlach in Valkenburg aan de Geul. He quickly worked his way up as a chef from the 'cold kitchen' to the 'hot kitchen', one step closer and closer to the cooker where the chef was in charge. There he had to pay close attention. No pardons, clear language, something was not right, then again. Again and again. Discipline and perseverance were necessary in those days, in kitchens where every cook worked under enormous stress to maintain a high culinary level and not disappoint (returning) guests in the restaurant. No plate went through if the chef did not approve it. After the 'shift', you were not done, as the cooker and kitchen had to be spotlessly clean for the next day. Like all the other apprentices, Roeland was put to that job when he started, but once he acquired his place next to the chef, he learned the true finer points of haute cuisine. The chef of St Gerlach was his greatest teacher, who took Roeland into the world of finesse, pure spices and authenticity in cooking. Mention a spice now and Roeland turns it into a sublime sauce and all the ingredients are pure and of high quality, just like then.

An (old) hand in the business with the professionalism still in his fibres, he now spends (overtime) hours in his own kitchen to pamper guests on the Costa Blanca with his, as we call it here, fine dining. Exquisita Gastronomía.

Hier voel je je gelijk thuis

Wat een warm welkom. Direct bij binnenkomst via een grote houten draaideur heb je zicht op het immense terras met een turquoise betegelde zwembad. Je slaat vanzelf even stil. De living met open keuken is sfeervol ingericht. De robuuste houten boomstamtafel straalt warmte uit en nodigt uit om aan tafel te gaan. Hier kun je gemakkelijk met 14 personen aanschuiven. In deze splinternieuwe witte villa in Benissa is werkelijk aan alles gedacht. Verblijf je met gezin, vrienden of familie in deze ‘Ibiza stijl’ vakantievilla, dan kun je je zowel binnen als buiten vermaken. In het souterrain is een ‘play ground’ voor groot en klein. Een fitnessruimte, sauna, dartsbord en pooltafel, en een kleine bar naast een mega thuisbios. Kinderen zullen zich hier echt niet vervelen. Buiten in de lager gelegen tuin is voor de beginnende en gevorderde golfer een professionele golf putting green met een afslagkooi en er ligt een netjes aangeharkte baan voor een partijtje jeu-de-boules. Het huis biedt onderdak aan 14 personen en heeft in het souterrain vier ruime slaapvertrekken met uitzicht op de tuin, waarvan één slaapkamer volledig rolstoel proof is. Deze kamer is via een pad achterom gemakkelijk te bereiken. Op de eerste verdieping zijn nog eens drie identieke slaapvertrekken met uitzicht op zee. Alle kamers zijn stuk voor stuk smaakvol ingericht door de eigenaren Jan Hendrik en Edith.

‘Voor ons moet het totale plaatje kloppen. Alles moet gewoon goed zijn voor een onbezorgde vakantie. Als mensen zeggen dat ze zich hier thuis voelen, zijn wij meer dan tevreden’, zegt Jan Hendrik trots. De voormalige ondernemer in zeilsport-- en kite surfing accessoires heeft oog voor detail en laat dat graag in deze villa zien. Naast dat deze villa van alle gemakken is voorzien, is er ook een speciale service aan huis. Van een ontbijtservice, massages, personal golftrainer tot een private chef. Voor de culinaire avonden komt Roeland aan huis om de gasten een gastronomische avond te bezorgen terwijl zij genieten van het magnifieke uitzicht over de pijnbomen en olijfbomen in de tuin en de Middellandse Zee op de achtergrond. Met ons concept ‘Gastronomìa Exquisita’ verbinden wij ons graag aan deze sfeervolle, luxueuze villa. Met privé diners, lunches, high standard BBQ op het terras of diners in de sfeervolle living, zorgt ons team voor die extra kers op deze luxe taart.

Such a warm welcome. Right on entering through a large wooden revolving door, you have a view of the immense terrace with its turquoise tiled pool. It automatically stops you in your tracks. The living room with open kitchen is tastefully decorated. The robust wooden tree-trunk table radiates warmth and invites you to sit at the table. You can easily accommodate 14 people here. This white villa in Benissa really has been designed with everything in mind. If you stay with family, friends or relatives in this 'Ibiza style' holiday villa, you can enjoy yourself both inside and outside. In the souterrain is a 'play ground' for young and old. A gym, sauna, darts board and pool table, and a small bar next to a mega home cinema. Children really won't be bored here. Outside in the lower garden is a putting green with a golf tee-off cage for the beginner and advanced golfer and there is a neatly raked course for a game of petanque. The house offers accommodation for 14 people and has four spacious bedrooms overlooking the garden in the basement, one of which is fully wheelchair-proof. This room is easily accessible via a path at the back. On the first floor are another three of the identical bedrooms with sea views. For the culinary evenings, Roeland comes to the villa to provide guests with a gastronomic dinner while enjoying the magnificent view of the pines and olive trees in the garden and the Mediterranean Sea in the back. With our concept 'Gastronomìa Exquisita', we are happy to associate ourselves with this charming, luxurious villa.
